Hilberg Pasquero Vareij

An unconventional red made mostly from the rare Bragat grape with a small part of Barbera, fermented and matured for structure and colour, yet light and fresh enough to be served chilled like a white.

Tasting notes

Floral nose of rosehips with a dry, fresh body; an unconventional wine that could be mistaken for a white in a blind tasting. With age, the aromatic, juicy character develops notes of almond and vegetal hints.

Pairs well with

Served chilled: fresh robiola, salami, fish soup or summer salad, sea bass with olive oil and pomegranate; also good with mildly spiced Asian dishes such as Thai basil chicken or Indian butter chicken, or with spicy Surinamese dishes and vegetable curry.

Bragat vines propagated by massal selection.
Vinification
Soft destemming of whole berries, manual fulling of both grape varieties together in stainless steel, natural fermentation for about two weeks depending on vintage, followed by natural malolactic fermentation and natural decanting. Bottled unfiltered with very low sulphites, aged a minimum of two years.
