Hand-harvested at phenolic ripeness and gently destemmed; the free-run juice is naturally drawn off from the skins, then matures in ceramic or concrete where it undergoes malolactic fermentation and rests undisturbed. Naturally decanted, without clarification or stabilisation, before bottling.
