- Handpicked in the early morning at peak crispness, rested overnight and gently pressed cold; fermentation starts in steel or concrete with temperature control and finishes in wood or ceramic, with malolactic fermentation, batonnage and maturation for a year. Bottled under a waning moon and rested a further six months before release.
