Giuseppe Vaira's re-creation of a Nebbiolo-making method recorded in 1606 by Gian Battista Croce, bottled right after fermentation for an off-dry, lightly sparkling style.

Tasting notes

Bright ruby red. Nose of raspberry, dog rose, fresh berries and sweet spice. Palate enriched by white pepper and fresh citrus zest and wild strawberry, with a lively carbonic bite and silky tannins.

Vinification
Vinified after the 1606 notes of Gian Battista Croce, jeweller to the House of Savoy: about a fifth of the grapes are fermented as whole clusters, then, after a short maceration, the wine is drawn off the skins to finish fermentation without them, and it is bottled straight after fermentation to keep an off-dry finish and light effervescence. Brief steel ageing, bottled 14 February 2025.
