Tasting notes
Light straw yellow with greenish reflections, brilliant. Very intense and fine, with fruity, green and tropical notes of pineapple and grapefruit. Good structure, soft, with decisive acid freshness.
Pairs well with
Fish and white meats, aperitifs; pasta with oil and chilli and fragrant spices; fresh cheese; blue fish, oysters, shellfish, chicken, ham, veal, ravioli, Italian antipasti.

- Pressing with low-temperature cryomaceration without oxygen. Fermentation in temperature-controlled steel; the must stays four months on the lees with continuous batonnage, then filtration and cold stabilisation, bottled in spring. 6 months in bottle.
