Metodo Classico sparkling wine: a second fermentation in bottle in May is followed by at least 36 months of lees ageing in a cool, dark cellar before release.
Tasting notes
Straw-yellow with light golden reflections, fine persistent perlage, aromas of white-pulp fruit, dried fruit and bread crust. Structured palate with creamy bubbles, long persistence, freshness and excellent flavour.

- Grapes harvested in small 20kg crates are pressed softly and gently for about 50% must yield, decanted 24 hours in temperature-controlled tanks, then ferment in steel tanks about 20 days at 18-20 C before resting on lees until spring.
