Tasting notes

Fine, creamy perlage. Straw yellow. Wide, fresh, elegant bouquet with many toasted dried fruit notes. Bread crust, toasted dried fruit and dried rose with small red fruits; rich and persistent.

Aperitif, excellent throughout a meal.

Vinification
Hand-picked in crates, chilled and pressed whole-bunch with 12 hours of maceration, fermented at 20 C for 7 days, no malolactic. A few months in steel on the lees, then refermentation in autoclave for 9 months by the Martinotti/Charmat method, 3 months in bottle. 3,000 bottles.
