A Pinot Nero Monferrato Rosso from the 0.5 ha Soldo vineyard, bottled in Magnum.

Tasting notes

Medium garnet. Intense undergrowth, leather and hide aromas with hints of chocolate. Great structure, sweet, soft, unaccentuated tannins and a velvety presence of spice (pepper). Pinot Nero described by the producer as difficult to grow and vinify.

Pairs well with

Grilled red and white meats, game, medium-aged cheeses.

Vinification
Traditional fermentation with frequent pump-overs on the skins in steel tanks, 28 to 30 C, 7 to 8 days, no added yeasts, spontaneous malolactic. Aged 4 months in steel, 12 months in barrique, 3 years in bottle; bottled at least 20 months after harvest. 1,000 bottles, Magnum 1.5 L.
