Tasting notes
Fine, creamy perlage. Pale onion-skin pink with amber reflections. Broad bouquet enriched by tertiary aromas from long lees contact. Notes of pastry, dried rose, dried fruit and small red fruits; full and persistent.
Pairs well with
Aperitif, excellent throughout a meal.

- Vinification
- Hand-picked in crates, grapes chilled and pressed whole-bunch with 12 hours of maceration, fermented at 20 C for 7 days, no malolactic. A few months in steel on the lees, then 50 months of refermentation in bottle by the Classic method; disgorged November 2020. 3,000 bottles.
