Tasting notes

Bright light ruby red. Varietal aromas from pomegranate to pepper. Balanced and slightly astringent, with evident but not sharp tannins and a slightly alcoholic finish.

Pairs well with

Cured meats, rice and vegetable first courses, white meat and fish dishes.

Vinification
Traditional fermentation with frequent pump-overs on the skins in steel tanks, 28 to 30 C, about 10 days, no added yeasts, spontaneous malolactic. Aged 6 months in steel with racking and 3 months in bottle; bottled after 6 months. 8,000 bottles.

16 to 18 C, or 10 to 12 C in summer
