A Chardonnay made in a few thousand bottles from Fontanile and Castel Boglione, barrel-aged about a year; the family says it shows best after 3 or 4 years in bottle.
Tasting notes
Fine, intense, pleasant bouquet with citrus and pineapple and a slight buttery note. Deep straw yellow. Savoury, graceful and well structured, rich, fresh and persistent.
Pairs well with
Tajarin with white truffle, raw scampi, pizza with buffalo mozzarella or apple glara.

- Vinification
- Soft pressing of free-run must only. The must is held at about 5°C for 36 hours on fine lees with bâtonnage, settled statically, then fermented about 15 days in a 50 hl wooden vat. The wine ages about a year in tonneaux (10% new) without bâtonnage, favouring evolution in reduction until bottling.
