A Cortese from the Gavi area that the family has made since before 1971, fermented cool and kept in steel.
Tasting notes
Fine bouquet of good intensity and persistence with lightly floral scents. Straw yellow. Fresh, smooth and graceful on the palate, of good structure, with citrus and mineral notes.
Pairs well with
Battered courgette flowers, oven-roasted guinea fowl or ricotta and scampi ravioli.

- Vinification
- Grapes are pressed the evening of the harvest and put in stainless steel. Alcoholic fermentation runs at 15 to 16°C for about 15 days to keep the delicate aromas. A short ageing in steel follows until bottling, generally in early spring.
