A Metodo Charmat/Martinotti brut sparkling wine made from Arneis grapes, with a second fermentation in autoclave and about two months of bottle refinement.
Tasting notes
A nice acidity gives freshness and persistence, with a particular natural salinity typical of Arneis from Montà d'Alba, and fine perlage.

- Vinification
- Handpicked grapes, destemmed, one third of bunches whole-bunch pressed to aid drainage and texture; the juice settles 36-48 hours at 14°C, then ferments about 12 days at 16°C. Aged in temperature-controlled steel tanks in contact with fine lees. Second fermentation (prise de mousse) takes place in temperature-controlled steel autoclaves with selected indigenous yeasts, followed by about two months of bottle refinement.
