Tasting notes

Brilliant garnet red colour. Deeply scented bouquet developing from dried flowers and wild rose to a tar character. Velvety, rich, ripe taste, tannic and well balanced; a powerful and rich wine.

Pairs well with

Perfect with game and white and red meat dishes of the grand cuisine with white and brown sauces, excellent with truffle. Best decanted and served at 18°C.

Vinification
Traditional Barolo vinification with fermentation of about 15-20 days at 26°C. De-stemming, soft crushing; the must is pumped over with the dèlastage system to maximise extraction of colour and varietal aromas. After malolactic fermentation, aged in Slavonian and French oak tonneaux with weekly top-ups and tasting tests.
