A Barbera d'Asti DOCG from the Antico Podere del Sant'Uffizio estate in Cioccaro di Penango, Asti, made from 100% Barbera.
Tasting notes
Deep ruby red, showing excellent finesse and elegance with hints of spices and fresh red fruit such as cherry and cranberry. Soft and structured on the palate, with the refreshing, tangy acidity typical of the variety.
Pairs well with
Cold cuts, hot hors d'oeuvres including slightly spicy appetizers, white meats.

- Guyot counter-espalier training. Altitude 250 to 270 metres a.s.l., gradient approx. 20 to 25%, vines approx. 25 years old, planting density 4000 plants per hectare, yield 7 to 7.5 tonnes per hectare.
- Vinification
- Grapes crushed and destemmed immediately after picking, macerated for 10 to 12 days for optimum colour extraction. Matured after the first rackings, bottled generally in the summer following the vintage.
