Sorì Paitin is Paitin's flagship Barbaresco from the historic Sorì Paitin plot, the warmest slope of the Serraboella hill, owned by the Pasquero-Elia family since 1796 and first labelled as Barbaresco in 1893.

Producer's notes on recent vintages: the 2017 shows growing structure and complexity, reflecting a change of vineyard approach in response to global warming to preserve Nebbiolo's freshness and ageability; the 2016, one of the best vintages of the last twenty years, shows itself slowly and with grace.

- Vinification
- Destemmed and pressed, then ferments and macerates 3 to 6 weeks in stainless steel, finishing maceration with the traditional submerged-cap technique. At the end of winter the wine is moved to wood barrels where it stays around 1.5 to 2 years depending on structure. Barrels are 25-50 hectolitre Slavonian and Austrian oak, about 15 years old.
