Paitin Serraboella

Serraboella blends fruit from two plots within Paitin's namesake cru in Neive: the more mineral, rugged 'd Tourun plot bordering the Bricco, and the finer, more sheltered Schiena d'Ernestin plot. It has been vinified as a standalone wine since 1999, having previously been part of the Sorì Paitin Barbaresco.

Tasting notes

Producer's note on the 2017 vintage: approachable given the generous vintage that brought sweeter tannins, without compromising the complexity and verticality typical of Serraboella; described as the door toward the complexity of Paitin's wines.

Vinification
Destemmed and pressed, then ferments and macerates 3 to 6 weeks in stainless steel, finishing maceration with the traditional submerged-cap technique. At the end of winter the wine is moved to wood barrels where it stays around 1.5 to 2 years depending on structure. Barrels are 25-50 hectolitre Slavonian and Austrian oak, about 15 years old.
