- Old vines (40 years), very low yield of 30 hl/ha. Farmed under SQNPI protocols.
- Vinification
- Fermentation in 50 hl French oak tini, 12-15 days skin maceration with gentle pump-overs, maximum fermentation temperature 26C. Aged 12 months in 25 hl French oak barrels, then a further 12 months in 400 litre ceramic amphorae, followed by at least 6 months in bottle.
