Very old vines (65 years), Guyot training, density 4500 vines/ha, yield 24-28 hl/ha. Farmed under SQNPI protocols.
Vinification
Fermentation in 50 hl French oak tini, 10-15 days skin maceration with gentle pump-overs, maximum fermentation temperature 26C. Aged 12 months in 15-20 hl French oak barrels (barrel size varies by vintage and yield), then a further 14 months in 400 litre ceramic amphorae, followed by 6 months in bottle.
