- Guyot training, density 5000 vines/ha, yield 70 q/ha. Farmed under SQNPI protocols.
- Vinification
- Bleed of 5-15% depending on vintage; fermentation in 50 hl French oak tini, 12-15 days skin maceration with gentle pump-overs, maximum fermentation temperature 26C. Aged 18 months in 400 litre Clayver ceramic tonneaux (60% of the mass) and French oak tonneaux (40% of the mass), followed by at least 6 months in bottle.
