Guyot training, density 4500 vines/ha for Nebbiolo and 5000 vines/ha for Barbera, Grignolino and Ruche; yields 45 q/ha (Nebbiolo), 60 q/ha (Barbera), 70 q/ha (Grignolino and Ruche). Farmed under SQNPI protocols.
Vinification
Generous bleed, especially on Barbera (often up to 20%); fermentation in 50 hl French oak tini, 10-12 days skin maceration with gentle pump-overs, maximum fermentation temperature 26C. Each variety aged separately for 12 months in 500 litre French oak tonneaux (first and second passage), then a further 12 months in 400 litre ceramic amphorae; the best blend is selected after ageing. 6 months of bottle ageing before release.
