- Guyot training, density 5000 vines/ha, yield 45-50 hl/ha. Farmed under SQNPI protocols.
- Vinification
- Generous bleed, up to 25%; maceration of 13-16 days in 50 hl French oak tini with gentle pump-overs, maximum fermentation temperature 26C. Aged 8 months in large 80 hl barrels and partly in 500 litre French oak tonneaux (first and second passage), then a further 8 months in 400 litre ceramic amphorae, followed by 6 months in bottle.
