- Vinification
- Fermentation in 50 hl French oak tini, 12-15 days maceration on skins with gentle pump-overs for silky, soft tannins. Aged 10 months in 30 hl oak barrels, then a further 10 months in 400 litre ceramic amphorae, followed by 4-6 months in bottle.
