- Vinification
- Whole grapes are destemmed and pressed immediately. The free-run juice is racked to stainless steel for cold static settling for a couple of days, then the clear juice goes to another tank and fermentation starts with selected yeasts. Halfway through, the must is moved into French oak barriques, where fermentation finishes and malolactic fermentation takes place. The wine ages several months in barriques before filtering and bottling in the summer after the harvest.
