A Metodo Classico Brut made from local white grapes on the left bank of the Tanaro, aged 48 months on the lees. Created for Filippo Gallino's 70th birthday and first bottled in 2004.
Tasting notes
Pale straw yellow. Aromas of flint, cedar, bread crust and citrus. Dry, balanced, mineral and savoury on the palate, very persistent, with notes of wildflowers and chamomile.
Pairs well with
Aperitif, starters, shellfish, raw seafood, fish.

- Vinification
- Vinified as a white wine, with the must separated from the skins before fermentation, soft-pressed with a pneumatic press and fermented in temperature-controlled steel tanks. Tirage takes place the summer after harvest, with 48 months on the lees followed by a further 6 months of ageing after disgorgement.
