A traditional skin-contact white made without selected yeasts or filtration, in about 2,000 bottles a year. First bottled in 2012 in tribute to Filippo Gallino's first Arneis Secco of 1972.
Tasting notes
Deep, intense straw yellow. Aromas of flint, sage, hay, apricot jam and aromatic herbs. Dry, full and creamy on the palate, with mineral, savoury notes and an intense finish of flint and liquorice.
Pairs well with
Starters, fish and fish soups, legume soups, white meat in sauce, vitello tonnato.

- Traditional Guyot training, 8 to 9 bunches per plant; yield of 60 quintals per hectare
- Vinification
- Grapes are crushed and destemmed with fermentation continuing in contact with the skins; after about 24 hours the must is separated from the pomace. Fermentation proceeds naturally, without selected yeasts, to full dryness. Aged on fine lees for about 6 months and bottled without particular manipulation.

- 10 to 12°C or higher; its character changes noticeably a few hours after opening
