An oak-fermented Sauvignon Blanc from vines planted in 1987, aged on fine lees.

Tasting notes

Yellow-green colour with intense fruity aromas recalling citrus, banana and melon. Very balanced on the palate with excellent structure and a pleasant finish.

Pairs well with

Pork, speck, goose, duck, fish dishes, smoked salmon, pasta with cream-based sauces. Also good with gorgonzola, pecorino, fossa, fontina and aged Piedmontese tome.

Vinification
Destemmed grapes macerate on the skins at 7 C for 20 hours. 90% of the must ferments in European oak barriques and 10% in stainless steel. The wine stays seven months on fine lees and is bottled in April after blending. Barrique-fermented and aged 12 months. Ageing potential 7 to 9 years.
