Ettore Germano Cerretta

Cerretta, which the estate calls the traditional soul of Serralunga's Barolo, grows on clay and heavily calcareous soil facing south to southeast, from 50-year-old vines, and ages 18 to 24 months in medium sized casks.

Tasting notes

Intense garnet red with light orange reflections, it offers a nose of ripe fruit and vanilla that, with age, evolves toward leather, tobacco and small dark fruit. On the palate the entry is full and enveloping, with tannins present but softened by ageing in medium sized casks; the mouth stays clean and the finish is long and persistent.

Vinification
The grapes are destemmed and crushed into upright steel tanks, where alcoholic fermentation takes place with about 40 to 45 days of skin contact, with daily pump overs and some delestage to extract colour and tannin. After pressing off and malolactic fermentation, the wine goes into medium sized casks of different ages and use, where it ages for 18 to 24 months, followed by bottling and around 12 further months in bottle.
