Blanc de Blanc Pas Dosè

By Ettore Germano, Barolo, Piemonte, Italy

Ettore Germano Blanc de Blanc Pas Dosè

A Chardonnay sparkling wine aged at least 65 months on its lees and disgorged with no dosage, from 13-year-old vines on stony, sandy soil over marl in Cigliè.

Tasting notes

The wine has an intense straw yellow colour, crossed by a fine, persistent bead in the glass. The nose shows floral and yeast notes, followed by toasted bread crust and flint, opening progressively onto fresh, saline and mineral sensations. On the palate the sip is full and rich, supported by fresh acidity; the fine carbonation extends the persistence, making the wine precise and versatile at the table.

Alcoholic fermentation takes place at low temperature. After pressing, the must ferments partly in 500 litre French oak tonneaux and partly in steel. After tirage in spring, the wine stays in bottle on its lees for at least 65 months. At disgorgement no dosage liqueur is added, to respect the variety's expression and the soil's minerality.
