Ettore Germano Alta Langa Extra Brut

A Pinot Nero and Chardonnay blend fermented partly in French oak, disgorged with no dosage after 30 months on the lees, from 20-year-old vines in Cigliè.

Tasting notes

The wine has an intense, bright straw yellow colour, crossed by a fine, continuous bead. The nose shows bread crust and yeast notes, followed by dried fruit and a discreet floral hint in the close. On the palate the sip is taut, vertical and precise, driven by good acidity; the mousse, creamy but restrained, cleanses the palate and carries the finish.

Sparkling wine is always a way to celebrate with friends and loved ones, but can also be a wine that pairs well with salame and cheese, a quiche or even shellfish.

Vinification
The Chardonnay ferments at low temperature, partly in 500 litre French oak tonneaux and partly in steel tanks. It then rests on its lees for a period during which some bâtonnage is carried out. Tirage takes place in spring with the addition of selected yeasts, followed by a second fermentation in bottle lasting 30 months including lees ageing. The bottles are then disgorged and topped up with the same sparkling wine, with no dosage liqueur added.
