Cocchi Bianc 'd Bianc

Brut Millésimé Alta Langa DOCG made from pure Chardonnay on white marl-limestone soils, with about five years on the lees. Cocchi says it was the first Alta Langa made only from white grapes.

Tasting notes

Complex aromatic spectrum of white fruits with an apricot hint. In the mouth a long sensation of aromatic notes with a delicate effervescence bringing out fine white chocolate and sweet fruit.

Vinification
Hand-picked in small baskets. Low yield: presses are loaded with 5,500 kg of grapes to get 3,000 litres of free-run Chardonnay must. First fermentation in small steel vats for nearly three weeks, then the wine settles on fine lees. The cuvée is assembled at the end of winter with wines from the same harvest. Second fermentation in bottle, about five years in a dark, cool place. Hand riddling on pupitres, ice disgorgement, dosage of 8 g/l.
