Cieck Ingenuus

Ingenuus is an unconventional, low-intervention white born from a friendly disagreement between Remo Falconieri and a promoter of natural wines; it ferments spontaneously without selected yeasts or temperature control, in a run of about 850 bottles a year.

Tasting notes

Golden yellow, naturally clear but not extreme since the wine is unfiltered; warm bouquet with hints of honey and vegetal nuances, dominated by mineral, flint notes; structured, full palate with hints of almond and a pleasantly tannic finish

Pairs well with

Traditional Canavese and Piedmontese dishes, from tufeja (bean and pork-rind soup) to bagna cauda and cardoon or Jerusalem artichoke pinzimonio, plus cereal-based first courses, soups and white meats

Vinification
Grapes are destemmed and crushed; the must ferments spontaneously on the skins without temperature control, macerated about six days with pumping over and punching down; the wine matures in third-passage wood for 18 months, racked twice, with part of the malolactic fermentation taking place there; fined by natural sedimentation in steel over winter and bottled during the old moon of March; ageing: 18 months in wood and six months in bottle
