Cieck Alladium

Alladium is Cieck's traditional Erbaluce passito, dried the old Canavese way on hanging racks over winter and aged at least five years in oak; the estate has made it since 1985 and named it after Aglié's Latin name.

Tasting notes

Shimmering old gold; enveloping bouquet of unrefined honey and candied lemon, aromatic and musky; sweet, fresh palate with a stable, broad structure, warm and velvety with a pleasant hint of freshness on the finish

Pairs well with

Pastries, dried fruit and nuts, blue cheeses, terrines and pâtés; a meditation wine, or an unusual aperitif

The best, healthiest, thin-skinned bunches are selected then hand-hung to dry naturally for 4-5 months, from September to January or February

Pergola training; altitude approx. 320 m above sea level; average vine age approx. 30 years
Vinification
Selected bunches are dried naturally on traditional hanging racks, protected from mould while allowing noble rot to develop; in January the grapes are gently pressed in a small wooden press, the cold must settles and then ferments; ages at least five years in small French and Slavonian oak barrels, refilled periodically as the wood absorbs product, followed by six months in bottle
