A sparkling wine made by the ancestral (Pet Nat) method, refermenting naturally in the bottle.
Tasting notes
Straw-yellow with a slight background of fine lees, so it looks slightly veiled if the bottle is shaken. Complex, intense scent of fruit with floral hints. Rich, fresh and fruity, with nuances of bread crust, yeast and citrus.
Pairs well with
A wine for the whole meal and an excellent aperitif. It goes well with all vegetarian and fish dishes. You can shake the bottle to drink it slightly cloudy and with a more intense flavour.

- Vinification
- Made using the ancestral method (Pet Nat, from Petillant Naturel), a wine refermented in the bottle. The grapes are lightly pressed to extract the indigenous yeasts on the clusters, then the must ferments in steel at controlled temperature; fermentation is stopped at the right sugar level using low temperature and the wine is bottled immediately. The remaining sugars and yeasts trigger a second fermentation in the bottle at the first warmth, producing light, elegant bubbles.
