Tasting notes

Intense straw yellow with yellow-green tinges. Intense, delicate, complex fragrance with discreet hints of wood. Plush, caressing taste with elegant concentration and length.

From one of the estate's oldest vineyards, out of 17 hectares under vine
Vinification
From careful biodynamic cultivation of one of the oldest vineyards on the estate (out of 17 hectares). Hand-harvested in small crates, the grapes are pressed and the must, once cleaned, ferments in stainless steel tanks. At 5 degrees alcohol, part of the partially fermented must is transferred to French barriques, where it finishes all the sugars; after slow static decanting and racking off the larger lees, it ages for about 9 months before being blended back with the portion that stayed in steel.
