- Vinification
- The estate's large vineyard surface, relative to the number of bottles produced, allows detailed selection in the field for a quality product. Grapes are manually harvested in perforated crates of up to 19 kg, brought to the cellar and immediately pressed with a modern pneumatic press. Only the free-run must is transferred to thermo-conditioned tanks for fermentation at controlled temperature, without forcing in terms of time and under constant analytical supervision.
