Boeri Vini Barolo

Nebbiolo from Castiglione Falletto, dry with a rich fragrance and vigorous tannins that need time. 15.5% vol; the shop lists vintages 2017, 2018 and 2019.

Tasting notes

Ruby red reflections. Clean, intense nose of withered flowers, spices, dry leaves and undergrowth; full body. Aromatic notes: liquorice, violet, undergrowth.

Pairs well with

Red meat dishes and medium to long-aged cheeses, or conversation at the end of a meal: herb-based stracotto.

Vinification
Mashing in stainless steel at a controlled 24 °C, spontaneous fermentation with indigenous yeasts, maceration about 3 weeks until the end of alcoholic fermentation. Racked into French oak; malolactic fermentation and tartaric stabilisation in wood. Aged 30 months in 500, 600 and 1,200 litre wood. The shop describes a four-year refinement: 24 months in 500-litre barrels, 12 months in steel, 12 months in bottle.
