Vinification
Picked in late August or early September. Crushed without destemming and soft-pressed in pneumatic presses. The must is cooled to 0 °C to stop fermentation so it stays sweet, and stored in stainless steel in a cold room. Second fermentation in sealed autoclaves with added yeast forms the foam.
