Tasting notes

Colour: pale straw. Nose: delicate, characteristic wild flowers. Palate: dry, savoury, fresh and harmonious; fine, persistent foam.

Vinification
Picked between August and September. Crushed without destemming and soft-pressed in pneumatic presses so the stalk does not break. Lees settle naturally, then selected yeasts ferment at controlled temperature and the wine is filtered at the end of fermentation. Second fermentation in sealed autoclaves, which forms the foam. Bottled on isobaric fillers in bottles built for 4-5 bar, the cork held by a wire cage.
