Vinification
Destemmed and crushed, then fermented at controlled temperature in large tanks with selected yeasts on the skins and seeds. Racked 3-4 times to clarify. Aged at least 38 months, at least 18 of them in wood. Filtered before bottling. Suggested drinking from about 4 years, with good vintages lasting much longer.
