Tasting notes
Colour: intense ruby red, sometimes violet. Nose: vinous, pleasant, fruity. Palate: dry, slightly bitter, tannic, harmonious.

Delicate roasts, white meats, grilled and stewed meats, fresh cheeses, soups, strongly flavoured fish, boiled vegetables, dressed pasta, risotto

- Crushed with destemming, fermented in large vessels with selected yeasts at controlled temperature on the skins and seeds until the natural sugars are used up. Racked off the lees, matured in suitable vessels, filtered and bottled at cellar temperature. Best within 2 years of harvest, though it holds a few years more.
