Tasting notes
Colour: deep ruby red. Nose: vinous and delicate, with a dog rose note. Palate: dry, full-bodied, slightly tannic and bitter.

Delicate roasts, white meats, grilled and stewed meats, fresh cheeses, boiled and fresh vegetables, salads, dressed pasta, risotto

- Picked in late September. Crushed with destemming, then fermented in large vessels with selected yeasts at controlled temperature on the skins and seeds until the natural sugars are used up. Racked off the lees, matured in suitable vessels, filtered and bottled at cellar temperature.
