Vinification
Picked between August and early September. Crushed without destemming, with maceration, then soft-pressed in pneumatic presses and fermented at controlled temperature with selected yeasts. Second fermentation in autoclave, then a special liqueur before bottling at 4-5 bar, cork held by a wire cage.
