Tasting notes

Colour: lively ruby red when young, more garnet with age. Nose: vinous, intense, with withered flowers. Palate: dry, round, tannic, softening with time.

Roast and braised red meats, white meats, grilled and stewed meats, fresh cheeses, fish soups, boiled vegetables, dressed pasta, risotto

Vinification
Picked in late September. Crushed with destemming, then fermented in large vessels with selected yeasts at controlled temperature on the skins and seeds until the natural sugars are used up. Racked off the lees, matured in suitable vessels, filtered and bottled from spring.
