Vinification
Crushed and destemmed, fermented in large temperature-controlled vessels on the skins and seeds until the natural sugars are used up. Racked off the lees and matured in suitable vessels. Second fermentation in sealed autoclaves with selected yeasts gives the light sparkle. Sterile-filtered and bottled at cellar temperature.
