Vinification
Soft pressing so the stalk does not break; lees settle naturally, then selected yeasts ferment at controlled temperature and the wine is filtered. Second fermentation in sealed autoclaves with selected yeasts gives the light sparkle. Sterile-filtered before bottling. Best within 2 years.
