Tasting notes

Colour: medium ruby tending to light garnet or pink. Nose: roses and red fruit. Palate: sweet, soft, delicate; fine, persistent foam.

Vinification
Picked in late August or early September and pressed without destemming in soft pneumatic presses. The must is chilled to stop fermentation early and settle the lees, then taken to 0 °C and stored in cold-room stainless steel tanks. Second fermentation in sealed autoclaves with selected yeasts forms the foam. Bottled on isobaric fillers at 4-5 bar, cork held by a wire cage.
