- Late August to early September
- Vinification
- Hand-selected bunches picked in late August or early September, pressed without destemming in soft pneumatic presses. The must is chilled to 6-8 °C, then 0 °C to stop fermentation, and kept in stainless steel in a cold room. Fermented in sealed autoclaves, which produce the carbon dioxide.
