- Vinification
- Hand-sorted grapes picked in late August or early September and pressed whole in pneumatic presses. The must is chilled to settle the lees, then stored cold in stainless steel tanks. Fermented later in sealed autoclaves, which produce the carbon dioxide behind the foam.
