Tasting notes

Ruby red with orange hues that show with age. Delicate, ethereal, full nose of violets and spices. Warm, full and dry, austere thanks to sweet, solid tannins.

Pairs well with

Roast, grilled and stewed meat and game, ripe hard cheeses; the producer suggests a Roero risotto finished with Roccaverano goat's cheese

Fermented in steel tanks at controlled temperature (20 °C, 15 to 20 days), malolactic fermentation, soft pressing, then 24 months in 10 hl oak vats of about 15 years of age (lightly toasted oak from the estate's own trees) and at least 6 months in bottle.
